Vegetarian & Vegan food in Vietnam

Unfortunately most of the best Vietnamese cuisine is centred around meat. Of course you can find vegetarian and vegan food, especially in the cities, but you won't be able to try most local dishes. It's not like in Thailand where you can swap the chicken for tofu in a Pad Thai; in Vietnam, many dishes use the meat as the flavour so it's not really possible to remove or replace it.
